Bodybuilder porridge with egg and oats
A really filling porridge for a power breakfast inspired by bodybuilders. Some of them cook porridge on the egg white, but then you miss out on all the nutrition in the yolk. Use all of it instead!
Vary the taste by using banana and cinnamon instead of the nectarine. Or add some goji berries.

Ginger biscuits with oats and banana
Biscuits do not have to be loaded with sugar and unhealthy fat. They can taste good anyway. They are quite rich in fiber and are spiced with a big measure of ginger. They are not very sweet, so if you have a sweet tooth you can add a teaspoon of syrup or honey. If you don’t like ginger you can reduce the amount, or leave it out all together. If you love ginger, use fresh, it’s much nicer than dried. Raisins can be swapped for any other dried fruit. The biscuits are great energisers if you are going for a hike.
Cooking time: 30 minutes, including a paus.
Cottage cheese bread with sunflower seeds – LCHF
A nice bread for those eating a little less flour and gluten. The seasoning gives nice flavouring and the sunflower seeds good chewing.
Cooking time: 5 minutes mixing, 15 minutes swelling and 40 minutes baking.

Lemon scented coconut nibs without any added fat
Coconut contains a lot of fat, so it’s unnessesary to add extra fat to the cakes. These coconut cakes can be done without adding any extra fat and with just a little bit of sweetening. With lemon peel they taste fresh and delicious. Don’t bake them too long, or they may get dry. If you want to add fat, use coconut oil. 1 or 2 tbsp is enough.
Cooking time: 25 minutes, including a tea break.
Ricotta and lemon pancakes with mango and raspberry puree
Ricotta and lemon pancakes with maple syrup and fruit puree are real luxury pancakes. They can be eaten both as a special meal and as dessert.
The pancakes get much lighter than ordinary pancakes because of the whipped egg whites. Lemon gives them a real tangy flavour.
2 portions – or 4 pancakes.

Kale soup with egg
This soup is mild in flavour and the egg increases the amount of protein in the meal, making it filling. Kale contains iron which is extra good for those not eating meat. When one has eaten this soup you can enjoy both the flavour and having been healthy.

Falafel – vegetarian chickpea balls
Falafel is a dish from the middle East and is served in bread like a sandwich. Falafel is originally deep fried, but frying them in a pan makes them a little healthier. Cooking them in the oven, you can leave the oil out completely.
Serve with a salad or in pita bread with tomato sauce or a salsa.
Cooking time: 30 minutes using pre-cooked chickpeas: 10 minutes mixing, 10 minutes paus and 10 minutes frying. Portions: 3 portions or 12 falafels.
