2-in-1: Almond milk and almond cream, lemon or liquorice raw food balls

Raw food balls with liquoriceTo make your own almond milk free from additives is easy. But, I think it’s a shame to throw out the leftovers. Use them to make almond cream or raw food balls. This recipe makes 600 ml / 1 pint of almond milk.

  • 250 ml / 9 oz / 150 g almonds
  • 1 pinch cinnamon, cardamon or vanilla extract if you want to flavour the milk
  • 2 dates if you want sweet milk

Cooking instructionsHow to

  1. Soak 250 ml / 9 oz / 150 g almonds in water overnight or longer. If they soak for 24 hours they start to sprout and become more nutritious.
  2. The next day rinse the almonds carefully. Remove the peel by squeezing the almonds. One argument for keeping the peel is that it contains fibre. One for removing it is that it contains phytic acid that may hinder absorption of minerals. That is however supposed to be removed with soaking.
  3. Add the almonds and 600 ml / 1 pint of water to a blender. If you want to add flavouring or sweeten the milk, add that too. Blend it finely. If you have time, let is sit for half an hour. Sieve though a fine net, cloth or a filter. Squeeze out as much as possible of the milk. Store in a glass bottle in the fridge for around 3 days.

Almond creamAlmond whipped cream

Add 1 tsp vanilla extract and 2 tbsp honey or syrup to the almond pulp and you’ll have  dairy free whipped cream.

  • 200 ml / 7 oz oats
  • 1,5 tbsp agave syrup or honey
  • 2 tbsp liquorice powder
  • 3 tbsp chia seeds or black sesame seeds to roll them in

  1. Mix all ingredients in a bowl. Let them sit for a while. Roll them into balls in chia seeds or black sesame seeds. If you don’t eat everything at once, keep them in the fridge for a few days or in the freezer.

Raw food balls with lemon and coconut

These raw food balls are mildly flavoured with lemon. Makes 16 raw food balls.

  • Almond pulp
  • 200 ml / 7 oz grated coconut
  • 1 tsp vaniljextrakt
  • 2 tbsp agave syrup or honey
  • 3 tbsp grated coconut to roll them in

  1. Mix everything in a bowl. Let it sit for a while. Roll in grated coconut. Store in the fridge for a few days or in the freezer.
