Ingredients
- 230 g / 8 oz black beans
- 140 g / 5 oz sweet corn
- 1 pepper
- 0.5 yellow onion
- 2 tsp olive oil
- 0.5 lemon
- 20 cherry tomatoes
- 1 handful / 35 g green leaves or baby spinach
How to
- Rinse 1 can of black beans and 1 can of sweet corn. Chop 0,5 onion, 1 pepper and 1 handful of green leaves. Cut 20 cherry tomatoes in pieces and mix everything in a bowl. Press the juice from 0.5 lemon over the salad and drizzle over 2 tsp olive oil. Ready to eat.
