Coming home late you need something healthy to eat. This bean soup is quick, simple and good. The dish is also easy to cook on a hike on a gas cooker.

Ingredients
- 1 clove garlic
- 1 small onion
- 1 vegetable stock cube
- 230 g / 8 oz mixed beans
- 150 g / 5 oz sweet corn
- 1 pinch salt
- 0.5 tsp pepper
How to
- Peel and chop 1 clove of garlic and 1 small onion and fry them soft in a pot with a little water.
- Pour in 400 ml / 1 3/4 cup water, 1 vegetable stock cube, 230 g / 8 oz beans (drain first) and 150 g / 5 oz sweet corn (drain this too first). Season with 1 pinch salt and 0.5 tsp pepper. Boil for 3-4 minutes. Done.
